Ingredients 
- ¾ cup chopped dates
- ½ teaspoon bi-carb soda
- 60g butter
- ¾ cup boiling water Soak the above ingredients for at least half an hour.
- ½ cup Stoney Creek Organic Flaxseed Meal
- 1½ cups self-raising flour
- ¹⁄³ cup chopped walnuts
- ¹⁄³ cup chopped crystallised ginger
- ½ cup raw sugar
- 2 large eggs (lightly beaten)
- ½ cup milk
Method
Mix all ingredients well and bake in a large (26 cm) loaf tin at 160°C for approximately 40 minutes.
