Ingredients

  • ¾ cup chopped dates
  • ½ teaspoon bi-carb soda
  • 60g butter
  • ¾ cup boiling water Soak the above ingredients for at least half an hour.
  • ½ cup Stoney Creek Organic Flaxseed Meal
  • 1½ cups self-raising flour
  • ¹⁄³ cup chopped walnuts
  • ¹⁄³ cup chopped crystallised ginger
  • ½ cup raw sugar
  • 2 large eggs (lightly beaten)
  • ½ cup milk

Method

Mix all ingredients well and bake in a large (26 cm) loaf tin at 160°C for approximately 40 minutes.
