Flaxseed Meal, Breadcrumbs and Herb-Crusted Chicken Recipe

Crispy on the outside and tender on the inside, this Flaxseed Meal and Herb-Crusted Chicken is a flavorful twist on an old classic.

By combining bread crumbs with Nutty Flaxseed Meal and aromatic herbs, you get a crunchy coating that’s not only delicious but also rich in fiber, lignans and other plant-based nutrients.

Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup bread crumbs (panko or regular)
  • ¼ cup Flaxseed Meal
  • 2 tbsp grated parmesan cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried Italian herbs (oregano, basil, thyme, …)
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • Flour
  • 2 eggs, beaten (or ¼ cup milk or Greek yogurt for coating)
  • Oil for pan frying

Instructions

  • Mix bread crumbs, Flaxseed Meal, parmesan, garlic powder, onion powder, Italian herbs, paprika, salt, and pepper in a bowl.
  • Dust the cutlets in flour until the surface is completely dry.
  • Dip each piece into beaten egg (or milk/yogurt), then dredge in the crumb mixture, pressing lightly so the coating sticks.
  • Pan-fry the chicken breasts in medium heat approximately 4-5 minutes per side, until golden brown and cooked through (internal temp 75°C / 165°F).
  • Let the chicken breasts rest 2-3 minutes before slicing.
  • Serve with roasted vegetables, potatoes, a fresh salad, or over pasta.
  • You can also drizzle lemon over the chicken.

If you would prefer a gluten-free version you can leave the bread crumbs out and only use Flaxseed Meal and herbs as the batter.
