Breakfast Muffins

Ingredients

Makes 12

  • 3/4 cup grated cheese
  • 1/2 onion, diced
  • 1/2 broccoli
  • 12 eggs
  • Prosciutto or ham (optional)
  • 1 1/2 tsp Stoney Creek Grapeseed oil
  • Pinch Himalayan pink salt (to taste)

Method

  1. Grease or line muffin tray and preheat oven to 200oC
  2. Mix all ingredients in bowl and pour into muffin tray.
  3. Place into oven for 30 minutes or until golden brown.
  4. Serve warm
