Date & Walnut Loaf
- 2/3 cup chopped dates
- 1/2 teaspoon bi-carb soda
- 60g butter
- 3/4 cup boiling water
- 1/2 cup Stoney Creek Organic Flaxseed Meal
- 1 1/2 cups self-raising flour
- 1/3 cup chopped walnuts
- 1/3 cup chopped crystallised ginger
- 1/2 cup raw sugar
- 2 large eggs (lightly beaten)
- 1/2 cup milk
Soak dates, bi-carb soda, butter and water together for at least 30 minutes.
Mix all ingredients well and bake in a large (26 cm) loaf tin at 160oC for approximately 40 minutes.
