Date & Walnut Loaf
- _ cup chopped dates
- _ teaspoon bi-carb soda
- 60g butter
- _ cup boiling water Soak the above ingredients for at least half an hour.
- _ cup Stoney Creek Organic Flaxseed Meal
- 1_ cups self-raising flour
- _Ú_ cup chopped walnuts
- _Ú_ cup chopped crystallised ginger
- _ cup raw sugar
- 2 large eggs (lightly beaten)
- _ cup milk
Mix all ingredients well and bake in a large (26 cm) loaf tin at 160¡C for approximately 40 minutes.
