Date & Walnut Loaf

Ingredients

  • _ cup chopped dates
  • _ teaspoon bi-carb soda
  • 60g butter
  • _ cup boiling water Soak the above ingredients for at least half an hour.
  • _ cup Stoney Creek Organic Flaxseed Meal
  • 1_ cups self-raising flour
  • _Ú_ cup chopped walnuts
  • _Ú_ cup chopped crystallised ginger
  • _ cup raw sugar
  • 2 large eggs (lightly beaten)
  • _ cup milk

 

Method

 

Mix all ingredients well and bake in a large (26 cm) loaf tin at 160¡C for approximately 40 minutes.
